Bacon & Mascarpone Rocket Pizza
2 pre-made pizza bases
¼ cup tomato paste
1 tsp Italian herbs
1 garlic clove, minced
Pinch of sugar
¼ cup water
1 cup Tatua Mascarpone
2 cup grated mozzarella cheese
6 rashers streaky bacon, cooked until crisp
1 ½ cups fresh rocket
½ cup cherry tomatoes, quartered
Fresh parmesan, to garnish
- Make the pizza sauce by combining the tomato paste, garlic, sugar, water and seasoning. Spread over the two pizza bases.
- Dollop the Tatua Mascarpone over the bases, and sprinkle over the mozzarella. Place into the oven for 10-12 minutes, or until the bases are crisp and golden.
- Cut the bacon into pieces, and scatter over the pizzas along with the rocket and cherry tomatoes. Drizzle with olive oil, then finish with grated parmesan. Serve immediately.
