Chicken Quesadillas


1 Tbsp olive oil

1/2 onion, diced

1 capsicum

2 medium chicken breasts, diced

2 cans chilli beans

1 can corn kernels, drained

4 large tortilla wraps

200g Tatua Cheese Sauce

200g Tatua Sour Cream

2 tomatoes, chopped

Small handful coriander, chopped


  1. Heat olive oil in a large saucepan, add onion, capsicum and chicken until chicken is cooked through.
  2. Add chilli beans and corn to the saucepan and simmer for 5-10 minutes.
  3. Cut each tortilla in half and grill until crispy.
  4. Place one half of the tortilla on a plate and top with the chicken mixture and a drizzle of Tatua Cheese Sauce, then cover with remaining tortilla half.
  5. Top each tortilla with Tatua Sour Cream and tomatoes.
  6. Serve immediately, garnish with coriander.
  7. Serves 2-4.
