Christmas Lamingtons

Ingredients

1 x large sponge cake

For green icing:

2 cups icing sugar

40g soft butter

¼ cup milk

2-3 drops green mint essence or food colour paste

For red icing:

2 cups icing sugar

40g butter

¼ cup milk

2-3 drops raspberry food essence or food colour paste

2 cups desiccated coconut

2 cups shredded coconut

1 can Tatua Dairy Whip

Method

  1. Cut the sponge into desired shapes – squares / rectangles or use a cookie cutter to make circles.
  2. Make up both icings – in a large bowl combine icing sugar, butter, milk and colouring and mix until smooth and liquid.
  3. Dip the sponge shapes into the icing and then roll in the coconut.
  4. Sandwich the coloured coconut sponge shapes with Tatua Dairy Whip and serve immediately.
