8-10 ginger biscuits

1 cup lemon curd

Tatua Dairy Whip Whipped Cream

4 meringues


  1. Finely cut the ginger biscuits.
  2. Arrange ginger biscuits in base of each serving dish.
  3. Top with lemon curd.
  4. Add a swirl of Tatua Dairy Whip Whipped Cream.
  5. Garnish with a meringue.
  6. Dust with icing sugar.
